Baked eggplant


We wash the eggplant and slice it. We sprinkle big salt and let it drain to leave some bitter juice.

We wash the white onion and chop it finely and we wash the green onion and cut it into rounds.

Peel the garlic and peel the peppers, wash it and cut it into strips.

When the eggplants have left their juice, we wash them and wipe them with a paper towel.

Fry them in a little oil on both sides then remove them on a paper napkin to remove excess oil.
