Dessert meringues with cream and peanuts

For the meringues: in a large bowl, mix the cold water from the refrigerator with the meringue mixer with the mixer for 6 minutes, until a firm meringue is obtained. Some of the meringue (more, less, to taste) is mixed with a few drops of red dye, for a delicate shade of pink.

Fill a posh for garnish and make swan shapes, swan wings, then make popcorn and otters with meringue colored in pink, in trays prepared with baking paper. I got 2 trays.

Put the meringues (you can put both trays in the oven at once) in the oven (do not preheat), over very low heat, for 25 minutes. I also kept the door ajar. Extinguish the fire. Do not take them out of the oven suddenly (because they will crack), but let them dry in the oven, with the door closed, for 1 hour and 20 minutes. They came out great, I was delighted with their texture and consistency.

For the cream: heat the liquid cream with the dark chocolate on a steam bath until the chocolate melts. Homogenize, refrigerate for about 5-10 minutes, then beat with a mixer until creamy.

Assembly and decoration: glue the meringues two by two with ganache cream and pass through salted peanuts. Although peanuts are salty, believe me it is a delicious combination! I also gave some coconut flakes for my sister.

For the countertop

250 g pitted dates

2 teaspoons of stevia powder

Method of preparation

Preheat the oven to 180ºC. Grease two 20 cm diameter trays with coconut oil. Baking paper can also be used for greater safety and to make it easier to remove the top from the tray.

Put the pitted dates and water in a blender and mix until they become a paste with a soft consistency. Then add the eggs, peanut butter, vanilla, baking powder and salt and mix until smooth.

The dough is placed in the two trays, in equal quantities. It is uniform with a spatula. Bake the trays for 25 minutes.

After they have cooled completely, the countertops are removed from the trays carefully, so that they do not crumble.

For the cream, put the butter, milk and cocoa in a pan. Bring to the boil and leave for another minute, stirring constantly. Then remove from the heat, pour into a bowl, add stevia and vanilla and mix.

The cream is placed between the two pieces of the countertop and then the cake is covered with it. It can be decorated to taste. Let the cake cool for an hour.
