Put the yeast in a bowl and mix it with the sugar and warm milk, then add the yolks, melted and cooled butter and orange peel. Mix well with a whisk. Ingredient list: 270 ml milk 2 egg yolks 80 gr sugar 25 gr fresh yeast (or an envelope of dry yeast) 50 gr butter a vanilla essence oil for frying a powdered salt powder sugar optional.

How to prepare dough: In a large bowl, add lukewarm milk, sugar and yeast, mix until the sugar dissolves, then add the yolks, butter (melted and cooled), vanilla essence and salt powder. Mix everything with a spoon, lightly incorporating the flour.

Knead the dough until it no longer sticks to your hands, if necessary, you can add a little more flour until you reach the desired consistency. Leave to rise for about an hour. in a warm place (I heat the oven for 1 minute then turn it off, put the bowl of dough and leave it with the door closed).

We break pieces of dough and form balls, we made them of 15 gr. the ball (as big as a grape), but that's up to everyone. We place them on a spaced baking sheet, because they will grow and let them rise for another hour covered with a napkin.

The oil must reach at least in the middle of the donuts, let the medium to low heat and brown them nicely on both sides. 1 pinch of salt
1 teaspoon grated lemon peel

1. Put the flour in a bowl and make a hole in the middle. Heat a little 50ml milk with sugar and dissolve the yeast. Pour the milk into the pan and sprinkle with a little flour on the surface. Cover and leave to rise until the flour sprinkled on the surface of the milk forms cracks.
2. Add the rest of the milk, the yolk, the salt and the lemon peel and knead everything with the mixer (now we have, then knead by hand!). Cover and let the dough rise for 30 minutes. Then knead for 5 minutes vigorously.
3. Spread the crust on the work surface sprinkled with flour and at a thickness of 2.5 cm punch circles with about 8 cm. Cover and let rise for 15 minutes.

Recipe Gogosi Berlin

Berlin donuts filled with apricot jam and berries jam.

Without any description, without other words, at work they are very good. And fluffy & # 8230

Ingredient:

  • 1 kg of flour
  • 450 ml of milk
  • 80 g yeast
  • 220 g of sugar
  • 2 eggs
  • grated peel of a lemon
  • 70 ml oil
  • a pinch of salt
  • frying oil
  • a yolk and a tablespoon of sugar to grease the dough

I kneaded the dough in the bread machine, but if you don't have a bread machine follow the steps below strictly, it is important for the dough to grow nicely.

It is important to know that before we start cooking: the flour must be at room temperature before working with it and in the kitchen it must be warm (aspects valid for all doughs that must be leavened).

Put the flour in a large bowl in the middle, make a hole and put the slightly heated milk, yeast and 2-3 tablespoons of sugar, knead everything for about 3-4 minutes until it is homogenous and leave it to rise for 15 minutes in the heat. After 15 minutes, add the remaining sugar, salt, grated lemon peel, oil, 2 eggs and knead for more than 15-20 minutes. If we consider that the dough is too hard or too soft we can supplement as appropriate with flour or warm milk, added a little. If we do not know what the consistency of the dough should be, it is enough to feel our earlobe and we realize: the dough must be as dead as the earlobe. Depending on this, supplement with milk or flour.

Let the dough rise until it doubles in volume.

Sprinkle the flour on the work surface, take a quarter of the dough and spread it until it reaches a thickness of about 5 mm. With a glass with a diameter of 8 cm we cut circles in the dough while we beat the yolk with a spoonful of sugar.

Put half a spoonful of jam on half of the dough circles and grease them with egg yolk and sugar on the edge.

We take a circle of simple dough and glue it over one with jam. We press the edges well so that there is no risk of losing the jam during baking. Let the donuts rise for a few more minutes before frying them.

In a large bowl, a deep frying pan or a larger pot, heat a lot of oil. When the oil is well heated, place the donuts one by one in the oil carefully. We have to keep in mind that they grow when fried and that is why we don't have to put a lot of fries at once so as not to pile them up.

Bake them on both sides, take them out on a napkin to absorb the excess oil and powder them with sugar. Our suggestion is to eat them as a dessert after a healthy portion of diced potatoes at Oktoberfest.

Good appetite for fluffy Berlin donuts.

Although I did think a quarter of the recipes here, on the weekend I promise to try making donuts filled with jam, or Berlin donuts as they are called. I try, I'm afraid my dough will grow or something.

Radu, as you read above, the jam is put in the donut before baking. The donut grows when fried and keeps it well inside. Be careful when eating, as the jam is hot and cold.

Madi, you can replace milk with plain water. I don't know if they will grow as strong, but they will taste good. Fasting donuts are without milk and without eggs.
